Leon’s Microwave Rice This is a nice and fast meal that is easy to make. The proportions are fine for one person.
Ingredients:

 2 cups of Minute Rice (or equivalent).
 Meat or meat substitute: 1 can of tuna or one package of “Yves Veggie Ground Round” (Simulated hamburger made from tofu).
 Vegetable: cut fresh vegetables (peeled baby carrots are good) or a canned vegetable.
 2 cups water or juice (or water plus your favorite Lipton Cup-A-Soup).

 Preparation:

Measure rice and pour into 1½ litre microwave-able bowl (I use a rectangular pyrex loaf/bread pan and this works fine.)
Add meat and vegetables.
Add water and stir so the rice is completely wet.
Cover with plastic wrap.

Cooking:
8 minutes on full power. Times will vary depending on machines but this should be good.
Notes:
You may need to add water if you add lots of vegetables or meat. If you just want to microwave the rice 8 minutes is fine. For larger portions you will have to experiment with the cooking time.
In the photographed example I didn’t include a ‘meat’ as an ingredient. The vegetables and fruit used were baby peeled carrots, fresh mushrooms, and craisins (cranberry raisins). I changed the cooking time to seven minutes because there was less bulk. It worked out fine.
